Cajun Herb-Baked Hog Fish with a Vegetable Medley

Cajun Herb-Baked Hog Fish with a Vegetable Medley

Prep time: 20 minutes
Cooking time: 40 – 45 minutes
Total time: 65 minutes

Ingredients

1 Hog Fish
1 tbsp. Blaze (spicy paste by Firehouse Spice)
1.5 Plantain, sliced Lengthwise
1.5 Zucchini, sliced thick
2 can Tomatoes, Diced (not used in photos)
1.5 Yellow Onion, quartered
2 tsp. Rosemary, minced
1 tsp. Thyme, minced
2 Garlic Cloves, minced
3 Garlic Cloves, whole
1 Lime
Salt
Black Pepper

Prep:

Preheat oven at 350 degrees for 20 minutes. Ensure Hog Fish is cleaned. Add seasonings to paste and spread on the inside and outside of fish. Score the fish (slash across the biggest part of the fish).Place 1 quarter onion in the fish’s cavity and thyme sprigs on the outside to intensify flavor. Place aside.

Directions:

In a bowl, gently mix diced tomatoes, onions, zucchini and plantain. Add 3 whole garlic cloves, 2 dashes of salt and 1 tsp Thyme. Place mixture at the bottom of the pan. Add fish onto tomato and seal with foil. Let bake for 30 minutes covered, 15 minutes uncovered. Remove from heat and let cook for minutes. Serve and enjoy.

Serving size: 4 – 6 ppl

Tips:

• Fish can be eaten with additional vegetables such as pumpkin, okra and cassava.
• Other side dish ideas include brown or black rice.
• A squeeze of lime can be used right before serving.
• The fish can be topped with sliced fresh tomatoes.
